Here’s the first of a series of mushroom and olive oil recipes…watch this space!
Recipe for summer platter of fresh mushrooms
- ¾ cup of Wangandary Olives certified organic extra virgin Manzanillo olive oil
- ¼ cup vinegar of choice (Maison Renoux Raspberry is great or try Maison Renoux Aigre Doux Balsamic style vinegar)
- 1 Ttablespoon Dijon mustard
- Mr Mushroom’s mushrooms with salt and pepper to taste
- Whisk together
- Arrange mushrooms on platter either whole or tear apart (Oyster mushrooms are best)
- Pour dressing over mushrooms and add chopped Italian parsley.
Enjoy on some crispy bread, or as a side dish.
