Unique Mushrooms meet unique Certified Organic Extra Virgin Olive Oil…

Two ‘foodies’ joined forces at the Wangaratta Farmers Market last Saturday. Mr Mushroom, Bernie Rosser and Wangandary Olives Bill Baxter both agreed that this is a marriage made in heaven!

Here’s the first of a series of mushroom and olive oil recipes…watch this space!

Recipe for summer platter of fresh mushrooms

Ingredients:
  • ¾ cup of Wangandary Olives certified organic extra virgin Manzanillo olive oil
  • ¼ cup vinegar of choice (Maison Renoux Raspberry is great or try Maison Renoux Aigre Doux Balsamic style vinegar)
  • 1 Ttablespoon Dijon mustard
  • Mr Mushroom’s mushrooms with salt and pepper to taste
Method:
  • Whisk together
  • Arrange mushrooms on platter either whole or tear apart (Oyster mushrooms are best)
  • Pour dressing over mushrooms and add chopped Italian parsley.
Enjoy on some crispy bread, or as a side dish.
